7-Minute Maple Frosting

If Paul Bunyan had a signature scent, it would be the fragrance of this freshly torched maple frosting. It filled my home with a warm toasted marshmallow scent and satisfied the desire for a pop color on top I was craving as well. Oh and it also takes less than 5 minutes to whip up (pun intended) and add to any cake, cupcake or pastry.       CandiAnne's Note: We were stationed at Fort Drum, NY for 4 1/2 years and maple weekend is a huge thing there. You can visit numerous producers, taste their wares, and grab some syrup or other goodies on your way out. In 2007 while visiting the various producers I picked up a bunch of recipe pages on all sorts of categories that were put out by Eat Smart New York which is part of the Cornell Cooperative Extension. These pages were funded by them and the USDA Food Stamp Program.

Ingredients
  • 3/4 cup maple syrup (255g bakers measure)
  • 1 tsp light corn syrup
  • 1/4 cup sugar (50g bakers measure)
  • 1 egg white
  • 1/4 tsp salt
Instructions
  1. Prepare a double boiler.
  2. Add all ingredients to a large bowl and place over a double boiler.
  3. Beating constantly using an electric hand mixer, mix ingredients over double boiler roughly 7 minutes until stiff peaks form. Scrape pan and continue mixing throughout.
  4. Remove from heat and continue mixing until cool and spreadable.
