Andre’s Cornish Hen with Wild Rice and Mushroom Stuffing

Hi there this is one of my new favorite chicken dishes, with a very easy to do recipe I hope anyone that tries it enjoys it as much as I do.

Ingredients
    Hen glaze
  • 6 tbsp butter
  • 1 1/2 cup mint apple jelly
  • 5 dash worcestershire
  • 2 tbsp dry mustard
  • 1/4 cup white wine vinegar
  • Andre Cornish hens
  • 4 whole cornish hens (split in half)
  • 2 pinch salt (optional)
  • 2 pinch pepper (optional)
  • Wild Rice Stuffing
  • 1 1/2 cup wild rice
  • 2 cup bread stuffing
  • 1/2 cup onion
  • 1/2 cup celery
  • 3 cup chicken stock
  • 1.5 oz dried green apple (optional)
  • 3 oz wild mushrooms (my package had morels, porcini, chanterells, oyster, shiitake, and lobster mushrooms)
Instructions
    Hens
  1. Melt butter, jelly, add Worcestershire, dry mustard, and white wine vinegar simmer 10mins.
  2. Place chicken in baking pan breast side down glaze chicken then put in 400* oven for 20 minutes.
  3. Turn chicken glaze breast and place back in the oven for 40 minutes glazing or basting often.
  4. wild mushroom and rice stuffing
  5. In a large saucepan combine chicken stock, chopped mushrooms, celery, onion, and rehydrated apples then bring to a boil.
  6. Add wild rice and simmer for an hour or until rice is tender
  7. Make sure the rice has a good cup of water left combine with the dried bread let sit for 5-10 mins stuffing should be fluffy and moist.
