Apple Cake with Cinnamon Cream Cheese Glaze

Fresh apples are crisp and sweet and hit the spot on a hot day. I love to go apple picking in mid-summer and throughout fall each year.  I usually find that I have brought home too many for my family to eat while ripe.  If that happens to you or you are just in the mood for an easy apple snack or dessert this cake is for you.  It makes a great breakfast too, with coffee!    It is moist and tender and filled with nuggets of apple yumminess.  It is good by itself but the glaze offers a wonderful sweet finish with just a hint of cinnamon to compliment the apples.

Ingredients
    Apple Cake
  • 4 cup apples (500g in baker's measure )
  • 2 eggs (100g in baker's measure)
  • 2 cup sugar (430g in baker's measure)
  • 2 tsp cinnamon (7g in baker's measure)
  • 1 cup nuts, chopped (110g in baker's measure)
  • 1/2 cup vegetable oil (122g in baker's measure)
  • 2 cup all purpose flour (285 g in baker's measure)
  • 2 tsp baking soda (14g in baker's measure)
  • 1/2 tsp salt (3g in baker's measure)
  • 2 tsp vanilla extract (8g in baker's measure)
  • (Optional) Cinnamon-Cream Cheese Glaze
  • 1/2 cup cream cheese (115g in baker's measure)
  • 1/2 cup powdered sugar (60g in baker's measure)
  • 1 tsp vanilla extract (8g in baker's measure)
  • 3-4 tbsp buttermilk (54-72g in baker's measure)
  • 1/2 tsp cinnamon (1g in baker's measure)
Instructions
    Apple Cake
  1. Peel, core, and dice apples into 1/2 inch pieces. Set aside.
  2. In a large bowl, sift flour, salt, baking soda, and cinnamon. Set aside.
  3. In a smaller bowl, mix eggs with oil and vanilla. Set aside.
  4. Add sugar and nuts, if using, to the flour mixture. Stir to mix well.
  5. Add the chopped apples to the flour mixture and stir well to coat the apples.
  6. Add the egg mixture to the flour/ apple mixture and stir until thoroughly mixed and flour is totally mixed in. The batter will be thick.
  7. Spread batter evenly into a greased 9x13 inch baking dish. Bake in a preheated 325 degree oven for about an hour or until a toothpick interted into the center comes out clean.
  8. Remove from oven and allow to cool before cutting.
  9. Optional Cinnamon Cream Cheese Glaze
  10. In a medium bowl mix, by hand or with a hand mixer, mix cream cheese until smooth.
  11. Add Powdered sugar and mix until incorporated.
  12. Add the vanilla, cinnamon, and half the buttermilk and mix until smooth. Add additional buttermilk to obtain desired consistency.
  13. Drizzle over individual cake pieces or over whole cake before cutting as desired.
Recipe Notes

  • If you don't have buttermilk, you can substitute your milk of choice.
  • I used granny smith apples, but you can use any apple you have on hand.
  • I used walnuts but you can use any chopped nut you desire.
