Apricot Coconut Balls

No-bake snacks and desserts are great to keep on hand for busy days and hungry kids (or husbands).  This one is great because it is quick and simple, with only 3 ingredients.  The dried apricots are just tart enough to balance out the sweetness of the coconut and condensed milk. Have fun and dress them up with powdered sugar or drizzle with melted chocolate.  YUM!

Ingredients
  • 1 1/2 cup dried apricots (300g in baker's measure )
  • 2 cup shredded coconut (184 in baker's measure)
  • 2/3 cup sweetened condensed milk (196g in baker's measure )
Instructions
  1. In a blender or food processer blend dried apricots and condensed milk until apricots are finely chopped.
  2. Put ground apricots in a medium bowl with shredded coconut and mix until well combined.
  3. Shape into small balls and place on a parchment-lined cookie sheet. Allow balls to set at room temperature until firm. Makes about 2 dozen 12g balls.
Recipe Notes

  • I used unsweetened shredded coconut, you can use sweetened if you want it sweeter.
  • If desired roll in powdered sugar and/or drizzle melted chocolate over the top.
