Bacon Griddle Cakes

Ingredients
  • 6 bacon slices
  • 1 1/4 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 egg
  • 1 1/4 cup milk
  • 1/4 cup butter, melted
Instructions
  1. Cut bacon into 1 inch strips, and fry it until it is crispy. Then, drain on a paper towel.
  2. Sift together flour, baking powder, sugar, and salt In a medium bowl.
  3. In a small bowl, whisk in the eggs, milk, and butter.
  4. Stir in the dry ingredients into the wet ingredients, until moistened (the batter will be lumpy) then, mix in the bacon.
  5. Using a 1/4 measuring cup, pour the batter onto an ungreased griddle.
  6. Bake until the top is bubbly and the edges are baked. Then, flip over to cook the other side (Do not press down on the top with a spatula).
  7. Once the other side is baked, serve with butter and syrup.
