Baguettes

Baguettes are wonderful for a side dish like garlic bread, to cut into sandwich rolls, or to cut into small slices for cheese and salami. Enjoy!!  I used baker's measures so you'll need a scale.
Servings: 1 yield(s)
Prep Time: 160 mins
Cook Time: 25 mins
Total Time: 185 mins
Ingredients
  • 250 g bread flour
  • 4 g instant yeast
  • 5 g salt
  • 165 g warm water
Instructions
  1. Add flour, salt, yeast, and water to a mixer, mix until cleanup stage (when the dough is cleaning the sides of the mixing bowl for you) then mix a few more minutes
  2. Let it set in the bowl covered with a towel for an hour then stretch it and fold it on all sides
  3. Let it set in the covered bowl another 30 minutes.
  4. Shape it into a round and let it sit another 20 minutes.
  5. Shape into a loaf, by rubbing between your hands to elongate then pulling and rubbing again until a baguette has formed.
  6. Add ice in a bowl to the oven for the first 10 minutes of baking to cause steam. Do this by putting ice in an oven-safe bowl on the bottom rack of the oven and the bread on the center rack.
  7. Bake at 450 for 25 minutes total including the 10 minutes of steam time until it is golden and crisp looking.
