Barley Casserole

I had never heard of a casserole like this before so I left the recipe as is. It was very different than I expected, but it was a good side dish.

Ingredients
  • 8 tbsp butter
  • 2 medium onions (chopped)
  • 12 oz mushsrooms
  • 1.5 cup pearl barley
  • 4 oz pimentos
  • 2 cup chicken broth
  • salt and pepper (to taste)
Instructions
  1. Melt the butter over medium high heat.
  2. Saute the onions in the butter until softened.
  3. Add mushrooms to the pan and saute for about 2 minutes.
  4. Mix in barley and pimentos.
  5. Pour the mixture into a baking pan.
  6. Add in the chicken broth.
  7. Bake uncovered in a 350 degree oven for about 45 minutes or until all the broth has absorbed.
