Berry Chocolate Cookies

These Berry Chocolate Cookies are amazing because they vary so much depending on what you use, they can be tart from the berry and sweet from chocolate or sweet from the berry while being savory from the chocolate. Here I used Strawberry and White Chocolate but, I have also made these with raspberries, blueberries, and blackberries so have fun with these and make them your own :) Just remember to chop down larger berries. You can also switch up the chocolate you want to use, not everyone likes white.

Ingredients
  • 2 cup fresh berries, frozen won't work
  • 4 tbsp lemon juice
  • 8 oz your choice of chocolate (224g baker's measure)
  • 2 1/2 cup all purpose flour (332g baker's measure)
  • 1 tsp baking powder (4g baker's measure)
  • 1/4 tsp salt (1 1/2g baker's measure)
  • 1/2 cup unsalted butter softened (55g butter)
  • 8 oz cream cheese softened (224g baker's measure)
  • 1 cup sugar (175g baker's measure)
  • 1 tbsp flour for dusting berries
  • 2 egg (108g baker's measure)
  • 2 tsp vanilla extract (4g baker's measure - can use extract of your choosing)
Instructions
  1. Preheat oven to 350
  2. Soak berries in lemon juice for 5 minutes, then drain and set aside
  3. Sift together flour, baking powder, and salt
  4. Blend cream cheese, butter, and both sugars until smooth
  5. Add in extract and eggs, one at a time until well combined
  6. Slowly add in flour mixture until combined
  7. Coat the berries in the extra 1 Tbsp of flour and slowly fold them into the batter
  8. Gentle fold in the chocolate you chose
  9. Drop the batter by 1" balls onto greased or parchment paper lined pan, give them room to spread
  10. Bake 10 minutes, then cool 10 min before removing from pan to continue cooling on wire rack
