Biscuits’n’Gravy
These are a normal weekend breakfast around here :) I used baker's measure for the biscuits so y'all are gonna need a scale.

Sausage Gravy

sausage
(I use hot italian but a lot of folks like Jimmy Dean, it's all your choice and this is optional if you're a vegetarian :))

all-purpose flour

2 1/2

milk

salt and pepper to taste
(LOTS of pepper :))
Instructions

Sift the dry together

Cut the butter into the dry until all crumbly, you can cut in with your hand if you don't have a pastry cutter

Add the milk until just combined - fold 3x - press it out till 3/4" thick and use a 2" circle cutter to cut out the biscuits. You can refold and repress to continue cutting.

Brush tops with melted butter and bake at 425 for 15 minutes until all puffed up and the tops are pretty golden
Sausage (or not) Gravy

Fry up your sausage at medium heat -- or ignore this if you're a vegetarian

Sprinkle flour into the pan, if you're a vegetarian add a little butter to the pan and let it melt to imitate the grease from the sausage

Whisk in the milk until you get that nice thick, beautiful gravy consistency. Add a little salt and all the pepper your heart desires. I like to add a little cayenne along with the black.

Cut your biscuits in half, pour the gravy on top and enjoy
