Blitz Torte

This recipe was a little difficult to complete but I am glad to have made it. It was an awesome opportunity and I thought it came out beautifully.

Ingredients
  • 1/2 cup shortening (95.5g (baker's measurement) )
  • 1/8 tsp salt (1.3g (baker's measurement) )
  • 72 g egg yolk (72g (baker's measurement) )
  • 1 tsp vanilla (13g (baker's measurement) )
  • 1 tsp baking powder (4g (baker's measurement) )
  • 1/2 cup sugar (100.5g (baker's measurement) )
  • 3 tbsp milk (45.38g (baker's measurement) )
  • 1 cup flour (120g (baker's measurement) )
  • 4 egg whites (122g (baker's measurement) )
  • 3/4 cup sugar (150g (baker's measurement) )
  • 1/2 cup pecans (65g (baker's measurement) )
  • 1/2 cup walnuts (50g (baker's measurement) )
  • banana slices
  • Cream Filling
  • 5 tbsp flour
  • 1 cup milk
  • 1 cup butter
  • 1 cup sugar
  • 2 tsp extract (vanilla or banana suggested)
Instructions
  1. Combine the first 8 ingredients and then spread into a greased and floured pan
  2. Add the egg whites to a bowl and beat until fluffy then gradually add sugar
  3. Spread mixture on top of the unbaked mix
  4. Mix the pecans and walnuts and cinnamon with the tablespoon of sugar
  5. Sprinkle the mixture onto the egg whites and bake for 30 mins at 350
  6. Remove from heat and let cool, top with cream filling and bananas
  7. Cream Fillling
  8. Combine flour and milk. Bring this to a boil and stir until thickened, then remove from heat and allow to cool completely.
  9. Cream butter, sugar, and your chosen extract together.
