Blueberry Bars

These bars are to die for! I have never really been a fan of blueberries, but these things are PACKED with flavor and are very hard to resist! The crumbly crust, paired with the gooey center of the blueberries make an amazing pair! I hope you enjoy them as much as I did!

Ingredients
    Crust/Crumble Topping
  • 1/2 cup unsalted butter (113.6g)
  • 1/2 cup granulated sugar (188.1g)
  • 1/4 cup light brown sugar, packed (45.5g)
  • 1 1/2 cup all-purpose flour (227.1g)
  • Filling
  • egg (Large) (51g)
  • 1/2 cup plain or vanilla Greek yogurt or sour cream (115.7g)
  • 1/3 cup granulated sugar (67g)
  • 2 tsp vanilla (8.5g)
  • 1 tbsp all-purpose flour (9.5g)
  • Blueberry Layer
  • 2 cup blueberries (332g)
  • 1/3 cup granulated sugar (67g)
  • 2 tbsp lemon juice (28.7g)
  • 2 tsp cornstarch (6.6g)
Instructions
  1. Preheat oven to 350F. Line an 8-inch square pan with aluminum foil, and spray with cooking spray; set aside.
  2. Make the Crust and Crumble Topping
  3. In a large, microwave-safe bowl melt the butter, about 1 minute.
  4. Add the sugars and whisk to combine.
  5. Add the Flour and stir to combine. Mixture will be very dry, and sandy with some larger pieces.
  6. Set 3/4 cup of crumble mixture aside.
  7. Transfer remaining mixture to prepared pan, and pack the mixture to create a even layer of the crust; set aside.
  8. Make the Filling/Blueberry Layer
  9. In a medium bowl, add the egg, greek yogurt, sugar, and vanilla, then whisk to combine.
  10. Add the flour and whisk to combine.
  11. Add the sugar, lemon juice, cornstarch and blueberries, and toss to combine.
  12. Evenly distribute blueberry mixture over the crust.
  13. Evenly sprinkle the crumble topping over the filling.
  14. Place in the oven and let bake for about 40-50 minutes, until the filling is bubbling, and topping is golden brown.
