Brown Rice Stuffing

dehydrated cranberries

Instructions

In a saucepan add 1 cup of brown rice to 2 cups of boiling water, turn heat to simmer, cover, and cook for thirty minutes, do not stir.

Preheat oven to 350 degrees and on a sheet pan place the Cornish hen and salt and pepper. Place in oven. Cook for an hour or until to temperature.

In a skillet add the sausage and cook until brown, drain, and reserve 3 tablespoons of drippings.

In the same skillet, add the onion, celery, cranberries, nuts, sage. Salt and pepper to taste. Cook until onions are translucent and celery has softened some.

Add the cooked rice and sausage to the pan and mix.

Plate the stuffing and the hen.
