Butter Rum Sauce

Ingredients
  • 1/3 cup butter (73g baker's measure)
  • 1 1/2 cup brown sugar (281g baker's measure)
  • 3 tbsp light corn syrup (82g baker's measure)
  • 1/3 cup milk or light cream (108g baker's measure)
  • 1/4 cup dark rum (70g baker's measure)
Instructions
  1. In a saucepan, combine all ingredients except the rum.
  2. Heat until the sugar dissolves.
  3. Remove from heat and stir in the rum.
  4. Cool to lukewarm. Serve over souffle or any plain cake or ice cream.
Recipe Notes

The sauce thickens as it cools. Add it to hot cocoa and enjoy a fabulous, warming drink. It's the perfect way to end the day! I am a huge Harry Potter nerd, so I also mixed the sauce with some ganache as a filling for my chocolate frogs! Most were filled with the simple ganache, but some I added a bit of coconut as well for some variation. None of them lasted more than a few minutes past the photo.
