Candied Orange and Pineapple Slices

The candied fruit slices are sweet, but not overly sweet and the orange rinds are not bitter.  These candied fruit slices are a welcome addition to any dessert!  Here they are used on an Orange & Pineapple Poppy Seed Cake.

Ingredients
  • 1 orange (161.5g baker's measure)
  • 3 pineapple slices (150g baker's measure)
  • 1 cup granulated sugar (200g baker's measure)
  • 1/8 cup extra granulated sugar (25g baker's measure)
  • 1 large bowl of ice water
Instructions
  1. Wash and dry orange. Cut orange into thin even slices. Discard any seeds and ends.
  2. Fill a large bowl with ice water, and set aside.
  3. Bring a saucepan of water to a boil and add orange slices. Boil the orange slices for 1 minute (to boil out the bitterness of the rinds) then place in the bowl of ice water until cooled.
  4. Drain cooled orange slices on a wire rack.
  5. In a large skillet over medium heat. Bring 200g (1 cup) of sugar and 236g (1 cup) of water to a low boil. Heat until sugar dissolves stirring occasionally.
  6. Turn heat to low and place orange and pineapple slices in the sugar-water mixture in a single layer.
  7. Simmer (do not boil) the fruit slices for 45 - 50 minutes or until rinds are slightly translucent, turning them over every 15 minutes.
  8. Place fruit slices on a cooling rack and allow to cool completely. (This will take a couple of hours or just leave them on the rack overnight).
  9. Sprinkle fruit slices with extra granulated sugar to prevent them from becoming sticky.
  10. Use immediately or keep fruit slices refrigerated in an airtight container until ready to use.

Reserve orange & pineapple simple syrup for another use.
