Caramelized Custard 2

Instructions

Add the 1/2 cup sugar and 1 tsp. water to the top part of a double boiler, cook low and slow until caramelized

In a separate pan, scald 2 cups of milk

While the milk is scalding mix the eggs, sugar, vanilla and salt.

After the milk is scalded, add to the bowl with all the mixed ingredients. whisk and combine until fully incorporated.

Once fully combined add to the pan that has the caramelized sugar

DO NOT MIX past this point.

Cover pan and place in double boiler. Cook for 45 minutes on low heat

Once in the double boiler, do not uncover until completely cook and cooled.

Let cool in fridge for several hours before removing from pan.

Easiest way to remove from pan is to place a bowl or plate on top of the pan and then flip the whole thing over. The custard should slide right out!
