Chaussons aux Pommes (French Apple Turnovers)

Chausson means slipper in French and these little apple slippers are absolutely delightful. Use my puff pastry recipe to make them from scratch. Ingredients use baker's measure so you'll need a scale.

Ingredients
  • 1 recipe puff pastry (https://mymomsrecipebook.com/recipes/puff-pastry/)
  • 275 g diced apples (I like Arkansas Blacks or Granny Smith)
  • 75 g butter
  • 120 g sugar
  • 60 g water
  • Egg Wash
  • 1 egg (well beaten)
  • 2 tbsp water (mixed into egg)
Instructions
  1. Make apple compote by putting all ingredients in a pot and simmering covered for 15 min. Apples should be tender but should still hold their shape.
  2. Roll out puff pastry less than 1/8" thick. Chill for 30 on a lined sheet pan.
  3. Cut out circles with 2 1/2" cutter. Brush edges with egg wash.
  4. Spoon 1/2 tsp into the center of each circle. Fold into half-moon shape then seal edges with the dull end of cutter or back (super dull side) of a butter knife.
  5. Brush with egg wash score in a nice design and bake at 375 for 20 minutes.
