Chicken Chop Suey

This was a neighbor's recipe that I've doinked with

Ingredients
  • 1 boneless, skinless chicken breast (sliced lengthwise to make 2)
  • 2 tbsp oil
  • 1 stalk celery (sliced thin)
  • 1/2 onion (sliced thin)
  • 2 cloves garlic (minced)
  • 1 bell pepper (sliced into thin strips)
  • salt and pepper to taste
  • 2 tbsp soy sauce
  • 2 tbsp cornstarch
  • 1 1/2 cup water
Instructions
  1. Add oil to pan and add salt and pepper to chicken. Fry chicken until browned on both sides. Move to plate
  2. Add veggies and garlic to pan until lightly browned but still have snap.
  3. Make slurry from cornstarch and water
  4. Add chicken back to pan, add soy sauce and slurry to pan and cook until thickened, stirring fairly often so nothing burns
  5. Serve over rice
