Chicken Noodle Casserole

This one was in the book but was never made. This was an interesting experience for me. The crunch of the nuts and the thin crispy chow mein noodles along with those that softened upon getting into the soup mixture was a bit of a mind game when they hit the tongue. It was really good even though it's SUPER different. I hope that you enjoy.

Ingredients
  • 1/2 cup onion (diced )
  • 1/2 cup celery (diced)
  • 1/2 cup green pepper (diced)
  • 1/4 cup butter or margarine
  • 3 cup cooked chicken (diced)
  • 6 oz chow mein noodles
  • 2 10 1/2 oz cans cream of mushroom soup
  • 2 cup chicken broth
  • 1 4 oz can pimiento (diced)
  • 3/4 cup salted cashews
Instructions
  1. Preheat oven to 350 and lightly grease a 3-quart casserole dish or 9x13 inch dish.
  2. Saute the onion, celery, and green pepper in butter until soft. Combine with chicken, soup, broth, and pimientos.
  3. Place in the casserole dish. Top with cashew nuts and noodles.
  4. Bake about 30 minutes.
