Chicken with Curry Sauce and White Sweet Potatoes

This dish may not be the most visually appealing but it definitely does the job when it comes to flavor. I used chicken thighs, white sweet potatoes, and turnips! Great curry sauce with the perfect hint of sweetness from the sweet potatoes.

Ingredients
  • 1 large white sweet potatoes
  • 1 large turnip
  • 2 garlic cloves, minced
  • 1/2 cup onion, diced
  • 2 cup chicken broth
  • 4 tbsp curry powder
  • 2 tbsp tumeric
  • 2 tbsp ground ginger
  • 1 tbsp olive oil
  • 2 tbsp cumin
  • 2 bone-in chicken thighs
  • salt and pepper for taste
Instructions
  1. Heat olive oil in a deep sauté pan and sweat minced garlic and onion for 3 mins
  2. Add broth and dry seasonings; bring to a boil
  3. Lower heat (to low) add chicken thighs; simmer for 50 mins
  4. Sweet potatoes and turnips- peel the sweet potatoes and turnip and cut into cubes
  5. Boil water in shallow pot and add cut potatoes and turnips; cook for 15-20 mins or until potatoes are tender
  6. Drain and serve with chicken and curry sauce
