Chocolate Chip Crackle Cookies

The flavor and aroma of these cookies transports me right back to my Mom's kitchen as a little girl during the Thanksgiving and Christmas holidays.  When my Mom would be pulling out all the stops to make sure everybody had all of their favorite goodies during the holidays.  These cookies have crisp edges and they're chewy in the middle.  Since these cookies are easy to make they'd make a great afterschool snack to have waiting for the kids when they get home!

Ingredients
  • 2 squares stick semi-sweet chocolate (14g baker's measure)
  • 1/4 cup cup vegetable oil (54.5g baker's measure)
  • 1 cup granulated sugar (200g baker's measure)
  • 2 eggs (100g baker's measure)
  • 1 tsp vanilla extract (4.5g baker's measure)
  • 1 cup all purpose flour (114 baker's measure)
  • 1 tsp baking powder (5g baker's measure)
  • 2 dash salt (1.5g baker's measure)
  • 1/2 cup powdered sugar (57.5g baker's measure)
  • 1/4 cup semi-sweet chocolate chips (40g baker's measure)
  • nuts optional instead of the chocolate chips listed above or even half n half
Instructions
  1. Sift the all-purpose flour, baking powder, and salt together into a medium-sized bowl. Next, using a mixing bowl, melt chocolate squares over a bain-marie.
  2. Once the chocolate is melted all the way through, (be mindful to wipe the water from the bottom of the mixing bowl as you remove it from the bain marie) attach the mixing bowl onto the mixing stand.
  3. While mixing on medium speed with a flat beater, add in the oil and sugar and mix until thoroughly incorporated. Once that is incorporated add in one egg at a time and mix until throughly incorporated.
  4. Remove mixing bowl from the mixer and stir in the vanilla extract and flour mixture. Add in the chocolate chips and mix thoroughly. Cover bowl and chill soft dough for several hours, or overnight.
  5. Preheat the oven to 350 degrees while panning the cookies. Using a very small scoop or a teaspoon, shape dough into small balls and roll them in the powdered sugar. Then place the shaped balls onto a lined greased baking sheet and bake for 9 minutes. Makes 3 dozen.
