Chocolate Coconut Drops
These little drops of heaven remind me of Almond Joys, except without the almonds. Although, you can surely add them to give a nice crunch. The soft texture of the inside of the drops pairs well with the crunchier exterior, or add your choice of nuts/seeds for an even better combination! It's fast, it's easy, it's delicious!

Instructions

Preheat oven to 350 degrees F.

Prepare a lightly buttered cookie sheet.

In the top of a double boiler combine the chocolate, salt, and the sweetened condensed milk, and stir frequently until thickened.

Remove from the heat, and fold in the vanilla and the coconut.

Drop it by teaspoonfuls about 1-inch apart from each other. Bake at 350 degrees for about 10-12 minutes, or until set. Immediately remove from the sheet and let cool.
