Coffee Cake

This easy to make coffee cake is so versatile that you can really make it all your own! With many different ways to make this cake, you can be ready for just about any occasion. All you need is 35 minutes and your imagination!

Ingredients

(50g (large egg))

(15g You can also use vegetable shortening or melted butter if you choose.)
Base ingredients for cake

granulated sugar
(50g)

liquid
(180g juice from fruit if using fruit in your recipe)
Sprinkle mixture

cinnamon

first mixture
(30g taken from the first 3 ingredients mixed)

butter
(30g I used unsalted and let it get to room temperature)
Instructions

Combine the flour, baking powder and oil

Save 2 tablespoons (30g) for later

Combine first sugar, egg, and liquid to the first ingredients.

Mix vigorously for one minute (by hand)

Spread mixed batter into a well-greased 9-inch pan

Drop spoonfuls of drained/crushed fruit over the batter

Combine the second sugar, cinnamon, batter (saved from the first step), and butter

Blend mixture with a fork until crumbly

Scatter sprinkle mixture over the top of the cake

Bake in a 400-degree oven for 25 to 30 minutes.
