Cranberry Fruit Bread
You'll love this bread for the smell alone! My whole house smells like citrus after baking this. This came out of the oven looking so pretty I couldn't wait to slice it open and give it a try. I have never been too big on cranberries but this bread was really good! I just know it will be a hit at this year's family holiday gatherings!

Instructions

In a large bowl, sift together the flour, sugar, salt, baking powder and soda. Cut in the shortening until the mixture looks like course cornmeal.

In a separate bowl beat the egg well. Add the orange juice and rind. Mix well to combine. Pour into the dry ingredients and mix just enough to dampen.

Gently fold the nuts and cranberries into the dough.

Spoon the dough into a greased loaf pan, spreading the corners and sides slightly higher than the center.

Bake at 350 degrees for about 1 hour or until the bread is golden brown and the center is done.

Remove from pan and let cool completely. Let sit overnight for easier slicing.
Recipe Notes
* Normally I would use fresh cranberries, but they were unavailable at the time I made this. I used dried cranberries instead.
