(you can use any kind of hot sauce you prefer)

Instructions

Preheat the oven to 375. Place lard, salt, And pepper into the cavity of the baking hen. Place baking hen into a doubled-up baking bag, And set aside.

Lightly oil pan, saute the green bell pepper, onion, garlic, and mushrooms.

Add wine, simmer for 2-3 mins before adding tomato sauce, paste, hot sauce, and tomatoes. Let simmer for another 10 mins.

Place the hen (including baking bags) into a roasting pan. Pour the sauce over top of the hen. Push air out of the bags, and tie them tightly, So the steam does not escape.

Place roasting pan on the center rack of the oven for 15 mins, Per pound. (Example: The baking hen I used was 7lbs, I cooked it for 1hr 45 min in the oven.)

Check that the temperature is 165 degrees. Then, take the hen out of the oven. Carefully open the bag. (Sauce will be very hot) This dish is best served over rice.
