Fettuccine with Chicken and Tequila-Lime sauce
This is a quick and easy meal with a ton of flavor. I love the cheesiness of the pasta with the smoke of the tequila and the tang of the lime. It's a full-on mouth surprise.

Ingredients

boneless & skinless chicken breast
(sliced in two)

medium clove of garlic

extra virgin olive oil

juice of lime

dried of fresh fetucine

medium red onion

roasted yellow bell pepper
(peeled and diced)

roasted red bell pepper
(peeled and diced)

tequila

Instructions

Slice the chicken breast into strips. Then place the chicken in a dish with the garlic, 2 tbsps of the olive oil and of the lime juice. Set aside to marinate for 20 minutes.

Bring a large pot of salted water to a boil, drop in the fettuccine and cook until al dente. About 8 minutes for dried pasta and 3 minutes for fresh pasta, drain in a colander.

In a large skillet, heat the remaining 2 tbsps of olive oil over medium-high heat, and saute the onion and chicken until tender, about 5 minutes.

Add the bell pepper, tequila, and the heavy cream. Cook until the liquid has thickened to sauce consistency.

Season with salt and pepper. Toss in the cooked fettuccine and stir well.
