Fish with Vegetables

Ingredients
  • 1 lb fish (your choice of whatever you like)
  • 1/2 tsp salt
  • 1 tsp corn starch
  • 1 tbsp soy sauce
  • 1 chicken bouillon cube
  • 1/2 cup boiling water
  • 2 tbsp salad oil
  • 1 tbsp butter
  • 1/2 cup sliced onion
  • 1 cup sliced celery
  • 1 cup sliced water chestnuts
  • 1 cup sliced mushrooms
Instructions
  1. Wash and dry fish on a paper towel
  2. Combine salt, corn starch, and soy sauce
  3. Next, stir in bouillon cube dissolved in boiling water; set aside
  4. Heat 1 tablespoon of oil and butter in a non-stick skillet
  5. Add fish filets and brown quickly on either side; set aside to keep hot
  6. Wipe out the skillet with a paper towel
  7. Add the remaining oil to the skillet
  8. When hot add the onions, celery, water chestnuts, and mushrooms
  9. Cook on high heat until crispy tender (do not overcook)
  10. Add soy-bouillon mixture and cook, tossing to mix, until vegetables are coated and liquid thickened
  11. Carefully stir in fillets
  12. Serve immediately
