Four Grain Bread

Ingredients
  • 3 1/2 cup all-purpose flour (475 grams)
  • 2 tbsp sugar (25 grams)
  • 1 tsp salt (0.5 grams)
  • 1/4 tsp baking soda
  • 2 tbsp regular or quick-acting active dry yeast (8 grams)
  • 2 cup very warm milk (120° to 130°) (473 grams)
  • 1/2 cup very warm water (120° to 130°) (118 grams)
  • 1/2 cup whole wheat flour (68 grams)
  • 1/2 cup wheat germ (68 grams)
  • 1/2 cup quick cooking oats (45 grams)
  • cornmeal for sprinkling
Instructions
  1. Sift together the all-purpose four, sugar, salt, baking soda, and yeast in large bowl.
  2. Add the warm milk and warm water.
  3. Beat on low speed until moistened, then beat on medium speed for 3 minutes while scraping the bowl occasionally.
  4. Stir in whole wheat flour, wheat germ, oats, and enough remaining all-purpose flour to make a stiff batter.
  5. Grease 2 loaf pans and sprinkle them with cornmeal.
  6. Divide batter evenly between pans.
  7. Sprinkle with cornmeal, cover, and let rise in a warm place for about 30 minutes or until batter is about 1 inch below top of pan.
  8. Heat oven to 400° and bake for about 25 minutes or until loaves are light brown.
  9. Remove from pans and set on a wire rack to cool.
