French Bread

Use this loaf for whatever your heart desires. I used both standard and baker's measures so you can use a scale

Ingredients
  • 2 cup bread flour (250 grams -- you want your flour LOOSELY in the cup DO NOT pack it, use a spoon to scoop it into your cup))
  • 1 tsp instant yeast (4 grams)
  • 1/2 tsp salt (5 grams)
  • 3/4 cup room temperature or slightly warm water (165 grams)
Instructions
  1. Add flour, salt, yeast, and water to a mixer, mix until it's cleaned up from the sides. Then continue mixing for a couple more minutes until it is climbing the hook on your mixer.
  2. Let it set in the bowl under a towel for an hour then stretch it and fold it all around.
  3. Let it set in the bowl under towel another 30 minutes.
  4. Shape it into a round and let it sit another 20 minutes under a towel.
  5. Shape into a loaf. Place it into a 450-degree oven. Add ice in an oven-safe bowl to the oven for the first 10 minutes of baking to make steam. I tend to use a pie plate on the lowest rack of the oven with the bread on the next rack up.
  6. Bake about 25 minutes until all golden and crunchy looking.
