Fresh Apple Cake

This cake became a favorite of mine to make when I lived in upstate NY 2005-2009. The fall apple harvest gave me so many apple options that I'd mix and match different types of apples which always made this cake different. I've had a lot of fun making it over the years.

Ingredients
  • 4 cup diced apples (not too small) (your choice, I prefer Granny Smith)
  • 2 1/2 cup unsifted flour (do not pack the cup)
  • 2 cup sugar
  • 3 eggs
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup oil (vegetable, canola, etc -- just not olive)
  • 1 cup chopped nuts (optional - I use walnuts and sometimes almonds)
  • 1/2 cup raisins (optional - I use white because I don't like black)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
Instructions
  1. Place diced apples in a bowl and add the eggs, 1 cup of sugar and the vanilla then stir
  2. In another bowl combine the other 1 cup of sugar, baking powder, baking soda, and the spices including the salt and mix these well.
  3. Add the flour to the spice mixture and combine well.
  4. Add the apple mixture to the flour/spice mixture and stir well to combine.
  5. Pour into a 13x9 and back from 50-60 minutes at 350, until a toothpick inserted comes out clean.
