Fried Rice
Pictured here with Chinese Lemon Chicken This rice is an awesome side dish and I often make it as a meal within itself.

Ingredients

cup
rice

1/2
cup
diced ham

2
eggs
-
6 to 8
water chestnuts
(chopped fine)

1/2
cup
soy sauce

pepper to taste
Instructions
Prepare Rice

In medium saucepan add the rice two cups boiling water. Cover turn heat to low and let simmer for 20 minutes until all water is absorbed. When finished allow rice to cool then place in refrigerator until cold. Do this early in the day or the night before.
Making Fried Rice

Scramble eggs in light oil then using spatula chop fine and set aside.

In the fry pan heat 2 tbsps of oil. Add rice, stir fry until hot.

Add all other ingredients and mix together.
