Frittata

This frittata is a wonderful little appetizer or it could be served as a snack.  You can also make this into a wonderful dessert.  This could be even made into a breakfast dish.  The possibilities are endless.  You just need to get in there and see what you come up with.  I found it really delicious.

Ingredients
  • 3 cup zucchini grated (you could use another kind of squash if you wish.)
  • 1 cup bisquick baking mix
  • 1/2 cup onion chopped finely (feel free to use any color onion you want)
  • 1/2 cup grated parmesan cheese
  • 2 tbsp parsley finely chopped (can use the dried parsley and just do 1 tbsp)
  • 1/2 tsp salt
  • 1/2 tsp marjoram (if you don't have fresh use the dried marjoram)
  • 1/2 tsp oregano (if you don't have fresh use the dried oregano)
  • 1/8 tsp black pepper (can use the white pepper as well)
  • 1 clove garlic diced fine (can omit if you want too)
  • 2 cup vegetable oil (can use canola oil or corn oil if you don't have the vegetable oil.)
  • 4 eggs slightly beaten (if you want to you can use the egg whites if you are on a special diet.)
  • 1 lb ground italian sausage cooked until no longer pink. (you can use any kind of ground sausage you wish.)
  • 2 red bell peppers diced (can omit if you want too)
Instructions
  1. Preheat the oven to 350 degrees. Cook the sausage until no longer pink and drain off the fat.
  2. Spray a 13*9*2 casserole pan with cooking spray.
  3. Mix all the ingredients into a large bowl until combined. Put the mixture into the prepared pan
  4. Bake in the oven until golden brown and delicious. This should take about 25 minutes depending on how your oven cooks. If it is not brown enough, turn on your broiler and broil it until it is browned. Be sure to keep an eye on it, because the broiler has a tendency to make things go brown really quickly and it could burn.

This recipe has so much versatility.  You can make it sweet or keep it savory.  I can be a breakfast dish, lunch, dinner,  appetizer, or snack.  The possibilities are endless.  This was a really good recipe to learn how to make it.  I will be making it again in different ways.  These kinds of dishes inspire me to get more creative.
