Frozen Maple Mousse

I've been trying to come up with different ways to garnish a maple mousse and I think this would be a great one to pair with fresh berries and granola, a little chocolate. I love how creative you can get with this mousse or it's great as a standalone!

Ingredients
  • 3/4 cup maple syrup (234g)
  • 4 egg yolks (68g)
  • 2 cup whipping cream (484g)
Instructions
  1. Over a double boiler, heat the maple syrup.
  2. In a separate bowl, beat the egg yolks well. While whisking the eggs, add in a little of the heated syrup to temper the eggs. Once well combined, add the eggs to the maple syrup and place back on the double boiler. Cook while stirring constantly until the mixture has thickened and lightened in color.
  3. Remove from heat and allow to cool to room temperature, stirring occasionally.
  4. In a stand mixer, whip the cream until stiff peaks form. In 3 additions, gently fold into the syrup mixture.
  5. Pour into mold of choice and freeze. May serve chilled or frozen.
