German Potato Salad
When you're not in the mood for mayonnaise, this is the way to go. It's a little tart and a whole lot of good.

Ingredients

bacon

cider vinegar

cold water

dry mustard

olive oil
(My mom used vegetable)

parsley leaves
(pack them into the cup tightly)

bunch green onions
(sliced thinly, whites only)

potatoes
(cubed, cooked, chilled -- an easy way to chill them is to run them under cold water after their done boiling)

lemon
(juiced)
Instructions

Fry bacon until crispy, then set it on paper towels to drain, blot it thoroughly

Place 1 tbsp of the bacon fat into the bowl you're going to make your salad in.

To the hot pan, you fried that bacon in, add the vinegar, water, and mustard stirring well and scraping up any leftover bacon from the bottom of the pan.

Add salt and pepper stirring well. Then add this to the bacon drippings in the bowl. Mix this all together very well.

Add the chopped parsley and broken up bacon to the bowl and stir.

Add the green onion slices and stir.

Lastly, add the cooled potatoes and the lemon juice, stir well. Adjust salt and pepper as needed and serve.
