Grilled Beef Polynesian Style

A little grilled taste of the islands on a summer's day. I love this because it's quick, easy and the pineapple is refreshing. I serve it over a bed of rice and use the remaining marinade as a sauce to pour over the top.

Ingredients
  • 1 1/2 lb beef, cubed into bitesize pieces (You can use London Broil, Top Sirloin, any fairly good cut)
  • 2 tbsp brown sugar
  • 1 tbsp ginger root (minced)
  • 1 garlic clove (chopped or pressed)
  • 1/4 cup onion (diced)
  • 1/4 cup juice from canned pineapple chunks (set chunks aside) (may use fresh pineapple, chunked and juice, I do)
  • 1/2 cup soy sauce
Instructions
  1. Mix sugar, ginger, garlic, onion, pineapple juice, and soy together. Place in a bowl or ziploc bag, add beef chunks and marinate at least 30 minutes, I do it overnight
  2. Skewer beef alternating with pineapple chunks
  3. Either spray your grill super well with nonstick spray meant for the grill or use nonstick grill mats because the pineapple will stick quickly as can be. Grill for 15 minutes, rotating every few minutes. I use silicone mitts for this.
