Ingredients

cheddar cheese

(diced)

dried mustard

spinach
(finely chopped)

(diced super fine )
Instructions

Melt butter over double boiler

Whisk in 1 tablespoon of flour at a time until smooth

Slowly whisk in scalded milk until smooth with no lumps

Stir in salt and cheese until fully melted, blended and smooth. Remove from heat and allow to cool slightly.

Beat egg yolks until light yellow in color, almost like lemon, add the above mixture to the bowl with the egg.

Add ham and dry mustard. Allow mix to cool some.

While above is cooling, beat the egg whites to firm peaks. Do not beat until dry, you still want them moist.

Add spinach and onion to cream mixture

Fold in egg whites, do not stir or beat these in

Pour into souffle dish and bake at 375 for 35 minutes.
