(sliced lengthwise to make 2)

salt & pepper to taste

green onions
(sliced thin, slight bit of the green included)

bell pepper
(diced)

apricot preserves

soy sauce

white wine vinegar

can sliced pineapple
(reserve 1/4 cup juice)
Instructions

Sprinkle chicken with salt and pepper, fry oven medium high until slightly browned

Add onion and bell and continue frying until slightly soft

Add pineapple slices
-
Mix preserves, juice, soy and vinegar in bowl. Pour into pan to glaze chicken and veggies
-
Serve over rice
