Hawaiian Chicken

Ingredients
  • 1 chicken breast boneless skinless (sliced lengthwise to make 2)
  • salt & pepper to taste
  • 2 tbsp oil
  • 2 green onions (sliced thin, slight bit of the green included)
  • 1 bell pepper (diced)
  • 1/2 cup apricot preserves
  • 1 tbsp soy sauce
  • 1 tbsp white wine vinegar
  • 1 can sliced pineapple (reserve 1/4 cup juice)
Instructions
  1. Sprinkle chicken with salt and pepper, fry oven medium high until slightly browned
  2. Add onion and bell and continue frying until slightly soft
  3. Add pineapple slices
  4. Mix preserves, juice, soy and vinegar in bowl. Pour into pan to glaze chicken and veggies
  5. Serve over rice
