quick Asian favorite - chicken, asparagus, tomatoes and broccoli together make for a healthy and vibrantly colored meal on your plate
Servings: 2 yield(s)
Prep Time: 10 mins

Total Time: 30 mins
Ingredients
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 chicken breasts (boneless, skinless, cut into strips)
  • 1 tbsp sesame seeds
  • 1 medium tomato (diced)
  • 1 onion (your choice on color, julienned)
  • 6-8 stalks asparagus (sliced diagonally (this is an and/or with broccoli))
  • 1/2 head broccoli (cut into florets (this is an and/or with asparagus))
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 2 tbsp soy (your choice, tamari, light or dark (I tend to mix both))
Instructions
  1. Mix honey and oil into a paste and rub into chicken strips
  2. Fry chicken over medium-high heat in oil of your choosing, for this I use a little more sesame or a very light olive. While chicken is frying, sprinkle with sesame seeds. When browned, place on a dish. Takes about 5 minutes to get well browned.
  3. Add a little more oil to your pan if the chicken soaked it all up. Add onions and gently stir fry for 1-2 minutes to begin to soften.
  4. Add tomato and sprinkle with oregano and basil. Then add asparagus and/or broccoli and stir fry until tender, about 10 minutes
  5. Sprinkle with up to 2 tbsp of sauce you chose
