Italian Bacon Burger

Although the title calls this recipe a burger, I have taken the liberty of giving this my take of an open faced BLT. The oregano and parmesan cheese give this an Italian feel and was a big hit with my family. Of course, you can always add a mixture of chicken, pork, or beef patty for a heartier meal.

Ingredients
  • 1 lb thick cut bacon
  • 4 slices, 7 grain bread
  • 1 large tomato, thinly sliced
  • 8 slices of provolone cheese
  • 1/2 cup parmesan cheese
  • dried oregano, to taste
  • salt and pepper, to taste
  • 2 cup salad greens (any mix of lettuces or greens you choose)
  • 1 tsp red wine vinegar (you can use red or white wine vinegar)
  • 2 tbsp olive oil (you can use any lightly flavored or flavorless oil you choose.)
  • 1/2 tsp dried oregano
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cut bacon slices in half and lay on a baking sheet in a single layer. Bake in the oven until crisp, turning the bacon over once. This should take anywhere from 15 to 30 minutes. After the bacon has crisped, place bacon on a plate with paper towels to drain the excess grease.
  3. Brush one side of the slices of bread with olive oil and toast in a large skillet on medium heat until golden and crisp.
  4. Place bread on a baking sheet, toasted side down with enough space between each piece. Put a single layer of bacon on each slice. Place two slices of tomato on each and season with salt, pepper, and sprinkle of oregano. Cover tomatoes with 2 slices of provolone and sprinkle with parmesan cheese. Bake in the oven at 350 degrees until the cheese is melted and bubbly.
  5. In a small bowl, whisk together vinegar, salt, pepper, and oregano until salt has dissolved. Slowly drizzle in olive oil while whisking until the vinaigrette has formed and emulsified.
  6. Toss salad greens in vinaigrette to lightly coat the greens. Place the greens on warm "bacon burger" and serve immediately.
