Italian Sauce

This has so many uses and it's got a nice little kick to spice things up. Here you'll find two uses for it; Italian Style Country Pork Ribs Italian Style Chicken Gizzards and Italian Sausage. It can also be thickened with a cornstarch slurry to pour over spaghetti. What you do with this is all up to you and your imagination.

Ingredients
  • 1/4 cup olive oil
  • 2 onions (diced)
  • 6 cloves garlic (pressed)
  • 1 large carrot (diced)
  • 2 stick celery (diced)
  • (2) 28 oz cans of whole peeled tomatoes
  • 6 oz tomato paste
  • 1 qt beef stock
  • 2 cup red wine
  • 1/2 cup parsley
  • 1/2 lb mushrooms (sliced thin)
  • 1/4 cup red pepper flakes
  • 1 tbsp oregano
  • 2 bay leaves
  • 1 tsp rosemary
  • 1 tbsp basil
  • 2 whole cloves
  • 1/2 tbsp pepper
  • 1 tbsp salt
  • 2 tsp sugar
Instructions
  1. Add olive oil to stockpot saute onions, garlic, carrots, and celery until softened but not browned
  2. Run whole tomatoes through a blender to grind them up then add them to the pot
  3. Add paste, stock, wine. parsley and mushrooms stir well
  4. Add all spices, bring to a boil then simmer 2 hours.
  5. Once done you may can it for later use, use it for pasta, ribs or whatever else you can imagine with it
