Kate’s Cosmic Carrot Cake

The Carrot Cake came out very moist. Almost every carrot cake I have every tried have been incredibly dry, so I really enjoyed this dessert. I will definitely make this again.     CandiAnne's Note: We were stationed at Fort Drum, NY for 4 1/2 years and maple weekend is a huge thing there. Ingredients
  • 4 eggs (228g (baker's measurement) )
  • 1 cup maple syrup (340g (baker's measurement))
  • 1.25 cup oil (56g (baker's measurement))
  • 1/2 cup sour cream (123g (baker's measurement))
  • 1 tbsp lemon juice (14.44g (baker's measurement))
  • 1 tsp vanilla (4g (baker's measurement))
  • 1 tsp almond extract (5g (baker's measurement))
  • 1 cup whole wheat flour (120g (baker's measurement))
  • 1 cup unbleached flour (120g (baker's measurement))
  • 1.5 cup ground almonds (165g (baker's measurement))
  • 1/2 tsp salt (3g (baker's measurement))
  • tbsp baking powder (14.38g (baker's measurement))
  • 1 tsp cinnamon (2.64g (baker's measurement))
  • 1 tsp allspice (2g (baker's measurement))
  • 1 orange rind (entire orange) (142g (baker's measurement))
  • 2 cup grated carrots (220g (baker's measurement))
  • 1 cup raisins (150g (baker's measurement))
  • Frosting
  • 12 oz cream cheese (12 oz (baker's measurement))
  • 2/3 cup maple syrup (227g (baker's measurement))
  • 1 tsp vanilla (4g (baker's measurement))
Instructions
    Cake
  1. Preheat oven to 350
  2. Beat eggs in the mixer for a minute on high
  3. Add the next five ingredients and continue beating for a minute
  4. Sift flour and toss in the almonds salt, baking powder, spices, and grated orange
  5. Make a well in the dry ingredients and add all the liquid at once, mix well but do not over mix
  6. Fold in carrots and raisins. Bake for 35-40 minutes frost when cool
  7. Frosting
  8. Beat cream cheese with mixer, add in the vanilla and syrup then mix until smooth and lump-free
