Lamb and Fruit Kabobs
These are a wonderfully fresh supper for hot summer nights. Low calorie turkey and lots of fruit cooked on the grill with a curry sauce made from butter, pineapple juice, brown sugar and curry powder.

Ingredients

fresh pineapple juice

boneless lean lamb
(cut into 1 1/2 inch cubes)

fresh pineapple
(cut into chunks)

fresh apricots
(cut into chunks)

orange
(separated)
-
2
bananas
(cut into chunks)

maraschino cherries
Instructions

Combine butter, sugar, curry powder, and pineapple juice, mixing well. Set aside.

Arrange lamb cubes on 4 skewers. Grill over medium heat for 20 to 30 minutes, turning occasionally.

Arrange fruit on 4 skewers, add to grill with meat during the last 10 to 15 minutes.

Baste meat and fruit with butter mixture and continue cooking until lamb is tender and fruit is heated.
