Lamb and Fruit Kabobs

These are a wonderfully fresh supper for hot summer nights. Low calorie turkey and lots of fruit cooked on the grill with a curry sauce made from  butter, pineapple juice, brown sugar and curry powder.

Ingredients
  • 2 tbsp butter
  • 1/4 cup firmly packed brown sugar
  • 2 tsp curry powder
  • 2 tbsp fresh pineapple juice
  • 1 1/2 lb boneless lean lamb (cut into 1 1/2 inch cubes)
  • 1/2 fresh pineapple (cut into chunks)
  • 2 fresh apricots (cut into chunks)
  • 2 orange (separated)
  • 2 bananas (cut into chunks)
  • maraschino cherries
Instructions
  1. Combine butter, sugar, curry powder, and pineapple juice, mixing well. Set aside.
  2. Arrange lamb cubes on 4 skewers. Grill over medium heat for 20 to 30 minutes, turning occasionally.
  3. Arrange fruit on 4 skewers, add to grill with meat during the last 10 to 15 minutes.
  4. Baste meat and fruit with butter mixture and continue cooking until lamb is tender and fruit is heated.
