Lamb Scotch Broth

A delicate lamb with a hearty delicious soup.

Ingredients
  • 3 lb lamb
  • 1/2 cup barley
  • 2 tbsp butter
  • 1/4 cup carrot
  • 1/4 cup celery
  • 1/4 cup turnip
  • 1/4 cup onion
  • 1 1/2 tsp salt
  • 1 tsp pepper
Instructions
  1. Cut 3 pounds of lamb into 1" cubes
  2. Put the lamb into kettle, cover with cold water and bring to a boil.
  3. Add 1/2 c barley and simmer for 1 1/2 hours or until meat is tender.
  4. Cool, skim fat and if there are bones, remove
  5. Put 2 Tablespoons of butter into a heating pan
  6. Add carrots, celery, turnips, and onion.
  7. Cook about 5 minutes and then add to soup
  8. Add salt and pepper
  9. Cook until vegetables are done and add water if too dry.
