Lemon Pineapple Poke Cake

A tart lemon pineapple poke cake with a whipped topping. This one was fun to make and oooh soo yummy. It is one the kids will love along with the adults. and super easy an fast as well. Perfect for any time and an AWESOME dessert to serve.

Ingredients
  • 1 1/2 cup unsalted butter softened (171g bakers measurements )
  • 1 1/2 cup sugar (383g bakers measurements )
  • 4 large eggs (at room temp 209g bakers measurements )
  • 3 cup cake flour (344g bakers measurements )
  • 1/2 tsp salt (3g bakers measurements )
  • 1 1/2 tsp baking powder (6g bakers measurements )
  • 1/2 tsp baking soda (3g bakers measurements )
  • 1 cup milk (239g bakers measurements )
  • 1/4 cup lemon juice (52g bakers measurements )
  • 1/4 cup vegetable oil (53g bakers measurements )
  • zest of 2 lemons (60g bakers measurements )
  • vanilla extract (i used vanilla paste - 3g bakers measurements )
  • 1 14 oz can sweetened condensed milk
  • 1 20 oz can crushed pineapple
  • 16 oz heavy whipping cream (472g bakers measurements )
Instructions
  1. Preheat oven to 350 degrees
  2. Frease 9 x 13 baking pan
  3. In a medium bowl mix together flour, baking powder, baking soda, salt and zest of lemon. whisk it together and set aside
  4. In another bowl, add milk, lemon juice, and vegetable oil. whisk well together til blended.
  5. In mixing bowl beat the softened butter until smooth. gradually add the sugar and mix on medium speed for 3 to 5 minutes until it is lightened in color and fluffy.
  6. Add the eggs one in at a time until the yellow of the yolk disappears.
  7. Add the flour mixture and the milk mixture alternately. begin and end with the flour. mix until combined and smooth do not mix about medium speed or over mix.
  8. Pour batter into your greased 9x13 pan and bake for 40 minutes until done
  9. Mix sweetened condensed milk and crushed pineapple together.
  10. Once the cake is done remove it from the oven and poke holes in it 1 inch apart from each other.
  11. Pour pineapple mixture over warm cake and then place in fridge for 2 hours
  12. Whip your heavy whipping cream
  13. Pull cake out of fridge and put whipped topping on it and serve
