Lemon Poppy Seed Muffins

These are super lemony :) I used baker's measures so you'll need a scale

Ingredients
  • 425 g all purpose flour
  • 198 g sugar
  • 20 g poppy seed
  • 12 g baking powder
  • 3 g baking soda
  • 4 g salt
  • 38 g lemon juice
  • 434 g plain yogurt
  • 13 g lemon zest
  • 108 g egg
  • 116 g unsalted butter (melted)
  • Syrup
  • 1/4 cup sugar
  • 1/4 cup lemon juice
Instructions
  1. Sift dry ingredients in a bowl
  2. In another bowl, whisk yogurt, lemon, and eggs.
  3. Fold flour mixture into wet ingredients then fold in melted butter,
  4. Portion into muffin tin and bake at 375 for 25 minutes until a toothpick inserted comes out clean
  5. Syrup
  6. While baking simmer sugar and lemon juice until thick syrup consistency.
  7. Pull muffins from the oven when done, drizzle with syrup and let rest 5 minutes then pull from tins and allow 10 min to cool on a rack before serving.
