Lemony Battered Fish
If you love the flavor of lemon, these this is definitely the recipe for you. The fish has a wonderfully crispy exterior and soft, flakey interior. I enjoy serving this with lemon butter tricolor rotini and broccoli with lemon wedges.

Ingredients

white fish such as perch or cod

all purpose flour
(divided into 1 cup and a 1/2 cup)

baking powder

salt

lemon pepper

lemon juice
(divided into 2 separate 1/3 cup portions)

egg

water

Instructions

Place 1/3 cup lemon juice into a separate bowl

Place 1/2 cup flour into a bowl

In a 3rd bowl place 1 cup flour, baking powder, salt, sugar, lemon pepper

Whisk together egg, water and other 1/3 lemon juice

Add egg mixture to dry mixture of flour, baking powder, salt, sugar and lemon pepper ~ mix this together until smooth

Heat oil over medium high heat

Dip fish into lemon juice bowl, then dredge through flour mixture on both sides shaking off any excess

Then place into batter, coating both sides well

Place fish into frying pan and fry 3-4 minutes per side until rich golden color and fish is flaky on the inside
