Maple and Bacon Semifreddo

Semifreddo is a lot like ice cream, but much easier to make. This is a nice sweet treat that my kids love helping me whip up when we have a sweet tooth and the flavor options are endless! This recipe was inspired by a maple mousse recipe I was given and decided to spruce up a bit. Adding some semi-sweet chocolate bits or even dipping pieces of bacon in chocolate before adding them would be a great way to change this particular one up!

Ingredients
  • 6 strips of bacon (72g)
  • 1 1/4 cup maple syrup (355g)
  • 2 eggs (150g)
  • 2 egg yolks (40g)
  • 2 cup heavy cream (500g)
  • 3/4 cup sugar (200g)
Instructions
  1. Fry up bacon. Place on a paper towel covered plate. Once cooled, pat down bacon with a paper towel to remove as much of the grease as possible. Chop into small pieces. Set aside for later.
  2. In a large bowl, combine maple syrup, eggs, yolks, and sugar. Place atop a double boiler and cook until the mixture has thickened and is no longer grainy. Whisk constantly. Remove from heat and allow to cool.
  3. In a stand mixer, whip cream to soft peaks. Gently fold into the cooled egg mixture.
  4. Gently fold in the bacon pieces.
  5. Pour into a loaf pan or mold of choice. Cover well with plastic wrap and freeze overnight.
