Maple Ginger Cake

A cake full of flavors and smells that fill your house       CandiAnne's Note: We were stationed at Fort Drum, NY for 4 1/2 years and maple weekend is a huge thing there. You can visit numerous producers, taste their wares, and grab some syrup or other goodies on your way out. In 2007 while visiting the various producers I picked up a bunch of recipe pages on all sorts of categories that were put out by Eat Smart New York which is part of the Cornell Cooperative Extension. These pages were funded by them and the USDA Food Stamp Program.

Ingredients
  • 1/2 cup granulated sugar (100 grams )
  • 2 tbsp shortening (28 grams )
  • 1 egg (40 grams)
  • 1 tbsp baking soda (10 grams)
  • 1/2 tsp salt (2 grams)
  • 1/4 cup maple syrup (85 grams )
  • 1/4 cup molasses (85 grams )
  • 2 cup sour milk (490 grams )
  • 1 tsp ginger (0.5 grams )
  • 1 1/2 cup flour (368 grams )
Instructions
  1. Whisk together flour, baking soda, ginger and salt. Set aside.
  2. Beat sugar and shortening with paddle attachment until light and fluffy.
  3. Add egg, maple syrup and molasses. (remember to scrape down the sides with each addition)
  4. Now add flour mixture and milk while alternating between the two.
  5. Add batter into cake pan 8x3 Bake for 35-40 mins. Enjoy with ice cream, whipped cream or just drizzle with maple syrup
