Instructions
Maple Parfait

In a small bowl pour gelatin over 1/4 cup of the cold water. Set aside for 5 minutes to allow the gelatin to bloom.
-
Meanwhile, over medium heat, bring the maple syrup to a boil. Then remove from heat
-
Add bloomed gelatin to the hot syrup. Stir until gelatin is completely dissolved.
-
Add remaining cold water and stir to incorporate.
-
Cover and place into the refrigerator until almost set.
-
Just before gelatin sets, whip mixture until foamy. It will lighten as it whips.
-
Divide foamy mixture into serving glasses, cover, and place into the refrigerate to set.
-
When ready to serve, garnish as desired with macadamia nuts or nut of choice, fruit, and/or sweetened whipped cream.

In a chilled metal bowl, beat whipping cream until soft peaks just start to form.
-
Add sugar, maple syrup, and cinnamon and beat until stiff peaks.
-
Spoon over parfait or put into a piping bag with a star tip and pipe over parfait. Garnish as desired.
