Maple Orange Pudding

This is a smooth and sweet pudding that has a little zing by combining orange juice with maple then yogurt or sour cream.       CandiAnne's Note: We were stationed at Fort Drum, NY for 4 1/2 years and maple weekend is a huge thing there. You can visit numerous producers, taste their wares, and grab some syrup or other goodies on your way out. In 2007 while visiting the various producers I picked up a bunch of recipe pages on all sorts of categories that were put out by Eat Smart New York which is part of the Cornell Cooperative Extension. Ingredients
  • 2 cup OJ (fresh or frozen)
  • 1/4 cup maple syrup
  • 2 tbsp sugar
  • 1 unflavored gelatin (packet)
  • 1 cup sour cream (or plain yogurt)
Instructions
  1. Combine OJ, syrup, and sugar in a pan and sprinkle gelatin. Heat gently stirring until gelatin dissolves
  2. Remove from heat
  3. In small add some of OJ mix to sour cream and blend
  4. Add back to pan stir until blended
  5. Pour into dishes and refrigerate for several hours
