Maple Parfait

When I think of a parfait my mind goes to layered yogurt, fruit, and granola. This recipe is completely different, no yogurt, fruit, or granola at all! Plus, it's frozen! It's easy to make and refreshing on a hot day. If you can't find nut brittle, use a crushed-up toffee bar to sprinkle on top.

Ingredients
  • 6 egg yolks (95 g)
  • 3/4 cup maple syrup (240 g)
  • 1/8 tsp salt (1 g)
  • 2 cup whipping cream (457 g)
  • 1/2 cup nut brittle candy or toffee bar (72 g)
Instructions
  1. Cook the egg yolks, maple syrup, and salt in a double boiler over hot water. Stir continuously until thickened.
  2. When this custard coats spoon, remove it from the heat.
  3. Pour into a bowl and beat with a wire whisk until cool.
  4. Whip cream until thickened but not stiff and fold it lightly into the custard.
  5. Freeze in a mold. When partially frozen sprinkle with crushed nut brittle, pralines or toffee bar.
